So yummy and healthy! Great to pair with rice, pasta or spaghetti squash.

Recipe Ingredients for Veggie Stir-Fry

2 tablespoons olive oil
1 chopped onion
10 cloves garlic
4 cups sliced mushrooms
4 cups sliced red peppers
1 cup chopped tomato
6 cups spinach
1/4 cup white wine

Recipe Directions for Veggie Stir-Fry

  1. Saute' garlic and onion in olive oil.

  2. Add red peppers, saute' till crisp tender.

  3. Add mushrooms and saute' till juice is rendered.

  4. Add tomato and white wine.

  5. Saute' till thickening begins.

  6. Add spinach till just wilted.

  7. Serve over rice, whole grain pasta or spaghetti squash.
