vegetarian lo mein or make as a stir fry and substitute brown rice for spaghetti

Recipe Ingredients for Veggie Stir Fry/Lo Mein

2 c. broccoli, chopped
1 c. peppers, green and red, chopped
1 c. carrots, sliced
1/2 c. onion, diced
1 c. asparagus, cut into bite sized pieces
1 c. pinto beans, drained and rinsed
2 T. sesame oil
2 T. soy sauce
1 T. ground black pepper
4 c. cooked whole wheat spaghetti

Recipe Directions for Veggie Stir Fry/Lo Mein

  1. prep all vegetables

  2. Cook spaghetti according to directions on box. Drain and set aside.

  3. cook carrots, onion, asparagus, broccoli and peppers in sesame oil. Season with salt and pepper. Once heated, add pinto beans, soy sauce and other seasonings.

  4. Before serving, toss vegetables with pasta and season to taste.
