very yummy vegetarian stir fry.. VERY SPICY!!

Recipe Ingredients for veggie stir fry w/ jasmine rice

1 tbsp olive oil
14 ounces tofu
1 small zucchini
1 small squash
1/2 small red onion
1 red bell pepper
2 chili pepper, thai
1 habanero pepper
1 yellow bell pepper
3 cloves garlic
1/4 cup bok choy
1/4 cup fresh basil
1 cup uncooked rice, jasmine
1 3/4 cup water
1/4 cup cilantro
2 tsp salt
1 tsp fresh ground black pepper
1 tbsp fresh ginger

Recipe Directions for veggie stir fry w/ jasmine rice

  1. brown tofu in pan with olive oil, garlic, and 1 tsp salt over medium heat (i brown the garlic first, but that's up to you).

  2. boil water and add rice and cilantro. reduce to simmer and let cook for 15 minutes.

  3. heat wok over medium heat and add ginger and a little non0stick cooking spray, if needed. chop all veggies however you want (i just try to make them quick to cook). add veggies and basil to wok. season with 1 tsp salt. cook for 5-10 minutes, depending on how crisp you want your veggies.

  4. put rice, veggies, and tofu on a plate and DIG IN!!

  5. tips - i put a lid on my wok to "steam" my veggies. it makes them cook faster, and they don't get overdone. i also press my tofu before cooking. you can cut the olive oil in half. i found that 1 tbsp was actually a little too much, but i just drained it on a paper towel afterwards.
