Delicious veggie stir fry with egg and tofu.

Recipe Ingredients for Veggie Stir Fry Hit

3 tbsp Soy Sauce
3 slices (1" dia) Ginger Root
2 clove Garlic
1 1tsp Oil, Sesame
1 lime yields Lime Juice
0.13 tsp Nutmeg, Ground
1/4 tsp Spices Crushed Red Peppers
0.5 fl oz Wine, Table, Red
1 serving Cayenne Pepper
7 oz Tofu, Firm
1 medium raw Bell Pepper Green
1 stalk, medium (7-1/2" - 8" long) Celery
1 medium raw Onion Yellow
0.13 tbsp Lemon Grass (Citronella)
8 pieces Carrots Baby Cut
0.33 cup, chopped Broccoli
0.5 cup, cubes Yam
8 spear, small (5" long or less) Asparagus
1 egg Organic Eggs
3 spray , about 1/3 second (1 NLEA serving) Original Cooking Spray
0.25 cup Water Chestnuts
2 cup Rice, White, Long-grain, Regular, Cooked

Recipe Directions for Veggie Stir Fry Hit

  1. Dry and cube tofu.

  2. Combine wine, ginger, 1 clove chopped garlic, spices, lime juice, 1/2 of sesame oil, and half of soy sauce in tuperware container. Add tofu, cover, mix well, and set aside to let tofu marinade.

  3. Chop remaining vegetables.

  4. Spray skillet with Pam and add sweet potato. Let sweet potato brown.

  5. Add onion and second clove of garlic. Follow with celery and carrot.

  6. Add juices from tofu marinade and let vegetables stew in marinade.

  7. Add tofu.

  8. Remove ginger.

  9. Add remaining vegetables.

  10. Add egg and mix thoroughly.

  11. Add remaining soy sauce and sesame oil.

  12. Add rice. Mix well and let all ingredients cook together.

  13. Serves 4.
