A warm (hot) veggie dish for cold winter days. It'll warm you up!

Recipe Ingredients for Veggie Stir-Fry with Couscous

2 cups stir fry vegetables
1 tbsp olive oil
1 tsp garlic
1/2 tsp red curry paste
5 mushrooms
1 tsp mustard seeds
1/2 cup couscous
1 cup water
2 tbsp golden raisins

Recipe Directions for Veggie Stir-Fry with Couscous

  1. Place Couscous in boiling water, stir, take off heat and cover. Set aside.

  2. Heat oil in skillet, add mustard seeds, cook until they pop (about 3 minutes). Add vegetables and cook about 5-10 minutes until done. Add curry paste (thin with a little water if too think) until it's desolved.

  3. Serve over Couscous with a dab of yoghurt to soften the "heat". Enjoy!
