Yummy! High in vitamin A, vitamin C, iron, and fiber!

Recipe Ingredients for Veggie Stew

3 tbsp extra virgin oilve oil
4 cups vegetable broth
4 cups diced tomatoes, no salt added
4 cups white beans no salt added
3 medium carrots, sliced
1 large zucchini, sliced
2 cups kale, chopped
10 ounces Whole Wheat Penne Pasta

Recipe Directions for Veggie Stew

  1. Heat a large stock pan over med high, add olive oil

  2. Add onions, garlic, carrots, and zucchini and saute 7-8 min

  3. OPTIONAL: de-glaze pan with 1/4 c dry red wine

  4. Add tomatoes with liquid and broth

  5. Bring up to a boil, add beans(drained) and kale.

  6. Add pasta and cook an addition 10 min

  7. Serve!
