2 lbs. Zucchini
1 eggplant
3 onions
1 lb. chopped tomatoes
2 tbsp. Extra Virgin Olive Oil
2 cups butternut squash
1/2 tsp salt

  1. Prehear oven to 425

  2. Add all ingredients to oven proof casserole

  3. Bake for 2 hours

  4. Let cool
