Recipe Ingredients for Veggie Stew

2 medium zucchini, chopped
2 medium yellow squash, chopped
1 medium yellow onion, chopped
4 oz. whole mushroom
14 oz. stewed tomatoes (Italian Style)
2 tblsp olive oil
2 cloves garlic, diced

Recipe Directions for Veggie Stew

  1. heat oil over medium heat. add garlic and sautee

  2. add onion and sweat for 1 min

  3. add the rest of the ingredients, bring to a boil and simmer for about 1/2 hour.

  4. add salt, pepper, Italian spices as desired for flavor.
