A light and healthy Spanish Tortilla

Recipe Ingredients for Veggie Spanish Tortilla

2 tbsp Butter
1 small Onions
1 cup, chopped Broccoli
10 large Egg, White
1 cup, sliced Peppers, Sweet, Red
1 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
1 tsp Salt, Table

Recipe Directions for Veggie Spanish Tortilla

  1. Thinly slice one medium red potato. Boil for 10 minutes.

  2. Meanwhile, slice 1 small onion and cook in two tablespoons of butter in a frying pan. Cook for about 10 minutes on medium heat then add garlic and cook one minute longer

  3. When potatoes are done line on bottom of pan and put cooked onions on top. Layer with sliced red pepper and broccoli. Salt and Pepper generously.

  4. Pour egg whites on top. Bake at 350 for about 20-25 minutes.
