Fresh veggies sauteed with garlic and onion make this spaghetti nutritious and bursting with flavor.

Recipe Ingredients for Veggie Spaghetti

5 serving 1/2 cup Pasta Roasted Garlic and Herb Italian Sauce
3/4 cup, chopped Squash, Summer, Zucchini, Includes Skin
3/4 cup, sliced Squash, Summer, All Varieties
1 cup cherry tomatoes Tomatoes, Red, Ripe
1 cup Spinach
1 cup, chopped Peppers, Sweet, Red
1 cup, diced Mushrooms, Portabella
3 tbsp Vegetable Oil, Canola
1/4 tsp Minced Onion
2 tsp Garlic Powder
2 serving Italian Seasoning - Marcum Gourmet Spices
1/2 tsp Spices Crushed Red Peppers
1 tsp Black Peppercorns Grinder
1/2 serving Extra Virgin Olive Oil
1 dash Salt, Table
10 oz Muellers Thin Spaghetti

Recipe Directions for Veggie Spaghetti

  1. Wash and chop mushrooms and vegetables.

  2. Put 3 tbs vegetable oil in large wok or saucepan on medium heat, adding half of minced onion, garlic powder, Italian seasoning, and black pepper.

  3. Add peppers, mushrooms, zucchini, and summer squash.

  4. Turn vegetables to coat with oil. Cook on medium for about 5 minutes, stirring frequently.

  5. Add tomatoes and spinach, continue cooking until spinach begins to wilt.

  6. Meanwhile, begin boiling water to cook pasta according to package instructions, adding olive oil and salt to water if desired.

  7. Stir jar of pasta sauce into vegetables. Turn heat to low.

  8. Add the remainder of the minced onion, garlic powder, Italian seasoning, crushed red pepper, black pepper, and parmesan cheese to sauce. Stir well.

  9. Continue simmering sauce until heated through, stirring often, approximately 10 minutes.

  10. After cooking pasta according to directions on package, drain. Do not rinse.

  11. Serve sauce over pasta in bowls.
