Makes 1 serving



Wheat spaghetti with spinach and summer squash. Use low-sodium, no sugar added tomato sauce (prego healthy heart or similar).

Recipe Ingredients for Veggie Spaghetti

1 c whole wheat spaghetti, cooked according to directions
2 c summer squash, sliced
1/2 c spinach
1/2 c tomato sauce
1 clove garlic, minced
1/2 tsp black pepper

Recipe Directions for Veggie Spaghetti

  1. Prepare pasta according to directions.

  2. Add squash to pasta water for final 2 minutes.

  3. Drain, and return to pot.

  4. Add remaining ingredients and cook over medium-low until heated through (about 10 minutes).

  5. Makes 1 serving.
