Recipe Ingredients for Veggie-Soup and Rice

2 cups broccoli, cut in bite size florets
1 cup cauliflower, cut in bite size florets
1 cup carrots, julienned
1 zucchini, diced
2 potatoes, diced

Raw Chowder:
1/3 cup almonds, soaked overnight
1 1/4 cups water
1/3 cup cashews
1 tbsp olive oil
1 tsp honey
1 cup celery, chopped
2 cloves garlic
1 tsp salt, sea
1 1/2 cup brown rice

Recipe Directions for Veggie-Soup and Rice

  1. Cook brown rice ahead.

  2. Combine broccoli, cauliflower, carrots, zucchini and potatoes in steamer and steam briefly (3 minutes) until bright in color.

  3. Make raw chowder by combining in blender the almonds and 2 cups of water. Blend until smooth. Add the cashews and blend until smooth. Add the water, olive oil, honey, celery, garlic and sea salt and blend well.

  4. Serve rice in individual bowls (rounded 1/3 cup) and top with 1/8 vegetables and 1/8 raw chowder.
