Hearty vegetable soup; good on a cold day.

Recipe Ingredients for Veggie Soup

1/2 tbsp olive oil
1 cup onion, chopped
4 cloves garlic, minced
1/2 cup carrots, diced
14 1/2 oz diced tomatoes, canned not drained
15 oz black beans, canned drained rinsed
16 oz dark red kidney beans, canned drained rinsed
11 oz sweet corn, canned drained
5 cups water
5 tsp bouillon, concentrated vegetable
1 yellow squash

Recipe Directions for Veggie Soup

  1. Sautee onion and garlic in oil

  2. Add remaining ingredients

  3. Heat to boil

  4. Simmer for 20 minutes
