Recipe Ingredients for veggie soup

1/2 cup chicken broth
2 cups water
3 teaspoons dry couscous
1 clove garlic
1 cup celery, diced
1 large carrot
1/2 cup frozen mixed vegetables
1/2 cup frozen peas

Recipe Directions for veggie soup

  1. heat chicken broth and water.

  2. add couscous once boiling. Meanwhile, chop fresh veggies and set aside.

  3. when couscous is well done (5-10 min) add frozen veggies and garlic.

  4. once the frozen vegetables are defrosted, add fresh veggies and serve immediatly.

  5. this makes one giant serving that will fill you up all afternoon! If you're not that hungry, share with a friend - it will be enough for both of you!

  6. (if desired, sprinkle some grated parmesan cheese on top for a creamier taste.)
