Easy to make, best tasting veggie soup perfect for any diet! Eat this dish in addition to every meal to cut down on how much you eat, or have it as a snack. VERY low on calories for how much you get. I usually eat 2 cups at a time.

Recipe Ingredients for Veggie soup

2 lbs carrots
1 lbs celery
1 green pepper
15 oz diced tomatoes
30 oz beef broth
15 oz chicken broth
15 oz black beans
2 oz noodles

Recipe Directions for Veggie soup

  1. *recipe actually calls for Lipton dry chix noodle soup mix, but I couldn't get it to add the info. Sub this for chicken broth and noodles.

  2. -Chop vegetables and add to large pot.

  3. - add tomatoes with juice

  4. - rinse beans and add to pot

  5. - add 1-2 packets Lipton soup mix,

  6. - add enough water to pot to just barely cover vegetable

  7. - add beef broth....use low fat, low sodium broth for an even healthier soup

  8. - bring to a boil over medium high heat

  9. - reduce heat and simmer until desired consistency

  10. *recipe designed to be flexible, add other vegetables that you like, keep them low in carbs though...no corn or more beans etc

  11. * remove the black beans for an even lower calorie count!

  12. * flavor with ground pepper, hot sauce, curry, parsley...whatever you like!
