basic veggie soup very delicious. Add whatever vegies you have in the fridge/freezer

Recipe Ingredients for Veggie soup

4 cups chicken broth
2 tomatoes
1 small onion (diced)
1 medium carrot
1 clove garlic (minced)
1/4 medium bell pepper
1/3 zucchini
1 cup chopped broccoli
1 cup frozen green beans
1 tsp olive oil
1 tsp thyme
1/2 cup barley

Recipe Directions for Veggie soup

  1. saute onions, garlic, carrot, and pepper in olive oil

  2. add broth and bring to boil

  3. add other veggies, canned tomatoes, and barley, and thyme

  4. cook until barley is soft and soup comes together
