Easy veggie soup, with beans for protein. Low calorie main dish

Recipe Ingredients for Veggie soup

11 g dried porcini mushrooms
1 onion, chopped
4 cloves garlic, minced
1/2 cup carrots, sliced
1/4 cup celery, diced
1/4 tsp (2 leaves) bay leaves
1 tsp marjoram
1 tsp thyme
2 tsp salt
2 cups (1 can, 14 oz) diced tomatoes
2 cups (1 can, 14 oz) navy beans, rinsed/drained
2 cups (or 2 large) peeled potatoes, chopped
1 cup frozen corn
1/2 cup frozen peas
5 cups water

Recipe Directions for Veggie soup

  1. Rehydrate the mushroom in 1 cup boiling water, ~10 min.

  2. Save the water from the mushrooms to add to the soup; chop the mushrooms.

  3. Saute the onions, garlic, carrots, celery, thyme, and marjoram until the onions are translucent and slightly browned.

  4. Add the mushrooms and mushroom water, sauteed veggies, and the remaining ingredients to a 6-qt crock pot.

  5. Cook for 6 hours on low.
