a great starter soup! add any veggies wanted!

Recipe Ingredients for veggie soup

2 c carrots, sliced
1/2 c bell pepper, diced
1/2 c mushrooms, sliced
1/4 c onion
3 cloves garlic
1 c celery, sliced
1 c acorn squash, peeled and chopped
6 cups water, up to 8 c
1 t olive oil
15 oz can diced tomatoes

Recipe Directions for veggie soup

  1. heat oil and add onion and garlic. Cook few min til starts turning brown.

  2. add remaining ingredients and simmer til all veggies are cooked thru.
