Soup with veggies Potatoes, Sweet Potatoes, Zucchini, Spinach

Recipe Ingredients for Veggie Soup

2 small onions
10 medium baby carrots
1 tablespoon olive oil
3 celery stalks
32 oz potatoes
8 oz sweet potatoes
8 oz zucchini
4 cups stock
4 cups water
5 cups chopped spinach

Recipe Directions for Veggie Soup

  1. Chop the onions, carrots, and celery.

  2. Heat the oil in a large pan and saute the onions, carrots, and celery until soft.

  3. Add the stock and the water and bring to a boil.

  4. Meanwhile, chop the potatoes into chunks and add to soup.

  5. When potatoes begin to soften, add the sweet potatoes (chunked).

  6. When those soften, add the zucchini (chopped).

  7. Finish with the spinach just until wilted and turn off the flame on the stove.
