Veggie Soup Recipe

Just a quick easy toss together. For a filling, low cal, tons of veg eat-a-roo.

Recipe Ingredients for Veggie Soup

1 1/2 liter Tap Water
4 beef bouillon cubes
376 grams Zucchini
160 grams White Mushrooms
2 cups frozen carrots
1/2 cup frozen broccoli
1/2 cup frozen cauliflower

Recipe Directions for Veggie Soup

  1. Combine water and bouillon begin to simmer. In the meantime dice Mushrooms and Zuc. Add to the pot. Dump the rest of your veggies in, bring to a boil, then allow to simmer for a minimum of a half hour. I usually let mine set on really low for 2 hours or so.

  2. Most times I will add an onion, a can of diced tomato's, and about 5-8 ounces of frozen chopped spinach. Even with the extra veg its still only 60 cal's a bowl.
