Recipe Ingredients for veggie soup with pesto 422

3 leeks
3 medium carrots
2 Yukon Gold potatoes
3 medium turnips
3 zucchini
3/4 lb green beans
2 c cannellini beans
3 large tomatoes
2 garlic cloves
3 quarts water
2 cups fresh spinach
2 cups cabbage
1/2 c lentils
3 cups basil leaves
1 garlic clove
2 tablespoons walnuts
1/2 cup grated parmesan

Recipe Directions for veggie soup with pesto 422

  1. chop

  2. toss in pot everything except last 3 items

  3. cook 30 min or so

  4. test - tender? stop

  5. meanwhile chop pesto items and set aside

  6. serve warm-hot with pesto

  7. I like to add: pinch of saffron, bay, sage and thyme while cooking. Also good with pasta or ravioli
