Veggie soup with a nice kick. Double the cayenne if you like it spicy!

Recipe Ingredients for Veggie Soup with lentils and brown rice

1 cup Lentils, Mature Seeds
0.75 cup Rice, Brown, Long-grain, Cooked
56 oz Diced Tomatoes
2 medium Carrots
2 stalk, medium (7-1/2" - 8" long) Celery
2 cup Leeks, (Bulb And Lower Leaf-portion)
2 1tsp Vegetable Oil, Canola
1 package (10 oz) yields Spinach
10 cup (8 fl oz) Water
1.5 tsp Kosher Salt
0.5 tsp Pepper, Black
0.5 serving Cayenne Pepper
2 Teaspoon Thyme
2 clove Garlic

Recipe Directions for Veggie Soup with lentils and brown rice

  1. Saute the leeks, carrots and celery in the oil. Add garlic for the last 2 min of sauteing.

  2. Add all the spices to the veggies, stir well.

  3. Add the remaining ingredients except the spinach. Bring to a boil, turn down to simmer, and simmer for about 1 hour or until both rice and lentils are cooked.

  4. Add spinach. If still frozen turn up soup and stir regularly until spinach is mixed in.

  5. Enjoy
