Recipe Ingredients for Veggie Soup in the Crockpot

13 7/10 oz green beans
12 oz beets
8 1/2 oz turnips
12 oz carrots
9 oz brussel sprouts
1 cup onion
6 1/2 oz sweet potato
2 cups garbanzo beans
4 cups tomato juice, low sodium
1 tsp cumin
1 tsp paprika
1 tsp red pepper
1 tsp garlic powder
4 cloves garlic
28 oz Crushed Tomatoes

Recipe Directions for Veggie Soup in the Crockpot

  1. cut all veggies into chuncks

  2. save the end pieces

  3. boil ends of veggies in 10 cups of water for 1 hr or until reduced by half

  4. strain through a cheese cloth into crockpot

  5. add veggies

  6. add tomato juice

  7. add can of crushed tomatos

  8. cook on low for 8 hours or until veggies are tender
