Quick all veggie soup, with no meat and little oil. Low in sodium too.

Recipe Ingredients for Veggie Soup 1

0.25 cup Chicken Broth
1/4 cup Crushed Tomatoes
0.25 cup Ready-Cut - Diced Tomatoes
0.25 cup Cannellini Beans
1 cup, diced Celery
0.25 cup pieces Mushrooms
0.5 cup Onions
0.3 cup Potatoes, Boiled
1 serving Extra Virgin Olive Oil
1 clove Garlic
0.25 cube Beef Bouillon
1 dash Pepper, Black

Recipe Directions for Veggie Soup 1

Saute the onions and celery in olive oil until sweated down. Add the mushrooms and garlic and cook until tender. Pour in your chicken broth to deglaze the pan, then add the diced and crushed tomatoes. Add the beans and potatoes along with the bouillon and pepper. I also chopped up the leaves from my celery and added them in at this point. Cook at a low boil until the potatoes are tender. This recipe is for one serving, but you can multiply to make many.
