Kinda like a minestrone. Any pasta will do. I used Garofalo Farfalle.

Recipe Ingredients for Veggie Soup #1

4 c. kale, rinsed, chopped
2 tsp. salt
1 c. onion, chopped
2 cloves garlic, chopped
1 stalk celery
1/2 c. carrots, chopped
1 1/3 c. farfalle
3 c. chicken broth
14 oz. white beans (cannellini)
1 c. zucchini, chopped
1 c. Haricots Verts
2 tsp. sage
1 tsp. oregano
1 tsp. basil
2 tsp. salt
2 tsp. pepper
2 tsp. garlic salt

Recipe Directions for Veggie Soup #1

  1. Cook kale in boiling water with 2 tsp. salt for 5 minutes.

  2. Add onions, garlic, celery, carrots, pasta and chicken broth. Bring to boil, then reduce heat to heavy simmer. Cook 5-10 minutes until pasta is almost al dente.

  3. Add cannellini beans, zucchini, green beans and remaining herbs and seasoning. Continue to simmer until pasta is al dente and last added vegetables are just tender.
