Recipe Ingredients for veggie shepherd's pie with sweet potatoes

2 pounds sweet potatoes
12.63 ounces sweet potatoes
1/2 cup skim milk
2 tbsp margarine
1 tsp nutmeg
2 tbsp olive oil
2 tsp minced garlic
3/4 cup carrots, diced
2 small onions
1 tsp ground thyme
16 ounces boca ground burger
3 tbsp Worcestershire sauce
2 tbsp tomato paste
1 1/2 tbsp flour
2 cups beef broth
8 ounces green peas

Recipe Directions for veggie shepherd's pie with sweet potatoes

  1. Topping: Peel and cube sweet potatoes. Boil until fork tender and drain. Add margarine, skim milk, and nutmeg and mash together. Cover to keep warm.

  2. Filling: Meanwhile in large non-stick skillet, add olive oil and heat. Add garlic and heat til translucent but not dark. Add onion, carrots, saute until onions become translucent.

  3. Add Boca ground burger, tomato paste, worcestershire sauce and stir together until Boca burger heated through. Add flour and stir until browned. Add 1 cup of broth and heat, stirring frequently until liquid absorbed. Add second cup of broth, reduce to simmer, stirring occasionally until most but not all of the liquid is absorbed. Remove from eat. Add thawed green peas and stir together. Pour filling into deep 9-inch pie dish. Gently spread mashed sweet potatoes over filling. Set pie dish on top of baking sheet and place on center rack of a 400 degree pre-heated oven for 30 minutes.
