Recipe Ingredients for Veggie Scramble

4 egg whites, beaten
1/2 cup cooked spinach
2 mushrooms, sliced
2 T tomato, diced
2 T onion, diced
2 T salsa

Recipe Directions for Veggie Scramble

  1. Spray a non-stick pan with cooking spray and pre-heat over medium heat. Add beaten egg whites and cook, stirring constantly, until almost firm. Stir in veggies and continue to cook and stir until desired doneness is reached. Season with salt and pepper to taste.

  2. Optional: serve in a sundried tomato and basil wrap or a spinach wrap.
