Lots of veggies and some protein from eggs are a good healthy light filling meal.

Recipe Ingredients for Veggie Scramble

2 eggs
1 red bell pepper
1 tomato
6 oz spinach
2 tbsp garlic
1 tsp salt
1/4 tsp black pepper

Recipe Directions for Veggie Scramble

  1. saute (on non-stick, no oil needed) a whole bag of baby spinach (6oz) with garlic

  2. chop veggies

  3. once spinach is wilted add the other veggies to pan

  4. scramble eggs in a small bowl

  5. pour eggs into pan

  6. note: can add other great toppings to the egg scramble, like fat-free sour cream or some chopped avocado
