A nice alternative to the egg-mc muffin

Recipe Ingredients for Veggie Sausage and Egg Sandwich

1 english muffin, multi-grain
1 extra-large egg
1 tbsp ketchup
1 veggie sausage pattie

Recipe Directions for Veggie Sausage and Egg Sandwich

  1. Beat egg well and pour into pan sprayed with pam, over low heat. Run a rubber spatula under the edges of the egg to lift sides and help to cook evenly. When almost done, flip egg over to cook top (about 10 seconds). Remove from heat. Fold in half, and then fold in half again so egg resembles a small triangle.

  2. Toast english muffin and heat veggie sausage in microwave for one minute.

  3. If desired, spread ketchup on inside of english muffin, then place egg and sausage and cover with other half of muffin.
