Veggie Saucy Hamburgers Note: the veggie burgers may not hold their shape as well as ground beef.

Recipe Ingredients for Veggie Saucy Hamburgers

1 Egg
1/4 cup Dry bread crumbs
1 small onion, grated
1 tsp Dried oregano
1/2 tsp Pepper
1/2 tsp Dijon mustard
1/4 tsp salt
340 g ground veggie round
1 Sweet green pepper, chopped
1 zucchini, chopped
19 oz Italian Style stewed tomatoes
1 tbsp Tomato paste

Recipe Directions for Veggie Saucy Hamburgers

  1. In a bowl, lightly beat egg; mix in bread crumbs, onion, oregano, tsp of the pepper, the mustard and salt. Mix in veggie round. Shape into eight inch thick patties.

  2. In large non-stick skillet, cook patties over medium high heat, turning once, for about 5 minutes or until browned. Transfer to plate.

  3. Add green pepper, zucchini, stewed tomatoes, tomato paste and remaining tsp of pepper; bring to boil.

  4. Nestle patties in tomato mixture; reduce heat and simmer, turning patties occasionally, for about 15 minutes and vegetables are tender crisp. Serve sprinkled with Parmesan cheese
