Cooked veggies served cold in salad with minimal dressing, salt and pepper.

Recipe Ingredients for Veggie Salad

3 leaves of romaine lettuce
1/2 cup of frozen vegetables
3 slices of eggplant
4 slices of yellow squash

Recipe Directions for Veggie Salad

  1. Tear apart 4 leaves of romaine lettuce.

  2. Add defrosted and cooked frozen vegetables.

  3. Cook Eggplant and yellow squash in a little water and olive oil. Use salt and pepper to taste.

  4. Once veggies have cooled, add to salad. Add a light dressing and serve.
