A rice and vegetable salad that could also be a main dish.

Recipe Ingredients for Veggie rice salad

2 cups rice
1/4 cup waterchestnuts
1/4 cup Cauliflower
1/4 cup brocolli
1/4 cup carrot
3 green onions
2 ounces dry roasted peanuts
1/2 cup buttermilk
1/2 cup plain yogurt

Recipe Directions for Veggie rice salad

  1. Cook rice mix according to instruction. To lower sodium use only 1/2 seasoning packet.

  2. Chop vegetables. Mix buttermilk and yogurt.

  3. Add cooled rice, vegetables, peanuts and dressing. Mix.

  4. Serve as a side dish, or add cooked chicken for a main dish. Also makes a good Vegetarian main dish
