Recipe Ingredients for Veggie Rice

1 cup(195 g) Rice, Brown, Medium-grain, Cooked
1 cup (1" cubes) Eggplant
0.5 cup, chopped Squash, Summer, Zucchini, Includes Skin
0.25 cup, chopped Peppers, Sweet, Green
1 medium (4-1/8" long) Onions, Spring Or Scallions
0.25 cup, diced Celery
0.75 cup Bertolli Sauce Tomato and Basil
1/4 cup leaves, whole Basil, Fresh
3 clove Garlic

Recipe Directions for Veggie Rice

  1. Cook rice.

  2. Saute chopped veggies in separate pan. When veggies are soft, add tomato sauce, basil and garlic and allow to simmer for 10 minutes. Stir in rice and serve with shredded cheese on top. If you want to make it heartier, you can add a can of rinsed chick peas or white beans.
