tasty. recipe from May 2012 Cooking light. Nutrition info in magazine off (lists 363 calories, 12 g fat, 11 protein. actually 494 calories, 18 g fat, 19 protein. only adjustments were to use LESS sour cream, LESS oil, LESS cheese, and LESS rice due to making only 3, omitted mushrooms, added 1/2 c corn and extra squash. split veggies among 3 tortillas not 4, but that would only make a 20 calorie difference.)

Recipe Ingredients for Veggie Rice Burrito with Quesadilla Cheese

3 tsp canola oil
1/4 c uncooked jasmine rice
2 cloves chopped garlic
1/2 c water
1 1/2 tbsp jalepeno
2 tbsp sour cream
1 tbsp lime juice
1/10 g cayenne
1 pinch black pepper
1 c chopped onion
1 c frozen corn
1 medium zucchini
1 medium yellow squash
3/4 c cherry tomatoes
3 serving Flour Burrito Size Tortillas
3 oz quesadilla cheese

Recipe Directions for Veggie Rice Burrito with Quesadilla Cheese

  1. saute rice and half garlic one minute stirring constantly in half tsp canola oil. add water, dash of salt, bring to a boil. cover, reduce heat, simmer 15 minutes. fluff with fork. add half jalepeno.

  2. combine sour cream, lime juice, cilantro (optional), half jalepeno, cayenne and black pepper in small bowl.

  3. heat remaining oil in pan. add onion, saute 2 minutes.

  4. add remaining garlic (and 1 c mushroom- omitted) and saute 1 minute stirring frequently.

  5. add frozen corn, saute one minute.

  6. add zucchini, saute two minutes or until throroughly cooked.

  7. add tomatoes, heat up for 30 seconds.

  8. remove veggies from pan and place in bowl. wipe pan clean.

  9. lay burrito tortilla out, place thin layer of sour cream sauce, add 1/4 cup cooked rice, 1 oz cheese, and 1/3 veggie mixture. fold and place in medium heat pan to brown, 1-2 min on each side. repeat.
