Veggie Ragu Recipe

Simple tomato based veggie stew which can be made in bulk in advance and used when needed

Recipe Ingredients for Veggie Ragu

800 g tinned tomatoes
1 eggplant
1 courgette
1/2 red onion
2 red peppers
2 tbsp olives
2 tbsp olive oil
1 large mushroom

Recipe Directions for Veggie Ragu

  1. Chop veggies and stir fry

  2. Add some chopped fresh rosemary

  3. When veggies are soft, add 2 tins of chopped tomatoes

  4. Simmer over a low heat for as long as you can - the longer the more flavour. I try for 2 hours

  5. At the end of cooking, add in some chopped fresh basil.

  6. Store in an airtight container in the fridge and use when necessary.

  7. I add smoked tofu, grate cheese on top and bake, for an amazing healthy dinner
