A quinoa recipe with vegetables.

Recipe Ingredients for Veggie Quinoa

1.5 cup Quinoa
.5 cup, diced Celery
1 medium (2-1/2" dia) Onions
1 cup, chopped or sliced Tomatoes, Red, Ripe
1.5 tbsp Olive Oil

Recipe Directions for Veggie Quinoa

  1. Heat olive oil in large pot or saucepan.

  2. Add diced celery and onions, saute in oil until soft.

  3. Add quartered cherry tomatoes and continue sauteing.

  4. Add quinoa and mix well, toasting the quinoa.

  5. Add 3 cups water.

  6. Bring to a boil, then lower to a simmer.

  7. Add desired spices-- I used garlic, red pepper, paprika, black pepper, parsley and basil.

  8. Mix well and cover.

  9. Simmer 15 mins.

  10. Add broth, mix well.

  11. Bring to simmer, remove from heat, and cover.

  12. Serve immediately.
