Delicious veggie burger with Quinoa

Recipe Ingredients for Veggie Quinoa Burger

5 medium mushroom Portobello Mushrooms
1 small Squash, Summer, Zucchini, Includes Skin
1 serving Extra Virgin Olive Oil
2 tbsp chopped Shallots
4 tbsp Parmesan
0.75 cup Quinoa
2 tsp Coarse Salt
1 large Egg, Whole
1.5 cup Bread Crumbs

Recipe Directions for Veggie Quinoa Burger

Pulse mushrooms in food processor until finely chopped and transfer to bowl. Shred zucchini and place on paper towel - squeeze to remove excess water. Add to mushrooms. Heat 2 tbls of oil in skillet over medium heat. Add shallots and red pepper flakes until cooked about 2 minutes. Add mushroom and zucchini and cook another 2 minutes. Remove from heat
