Spinach, Pepper, Onions & Cheese in Quiche :)

Recipe Ingredients for Veggie Quiche

1 cup Spinach
1 cup, chopped Peppers, Sweet, Red
1 cup, chopped(160 g) Onions
8 medium Egg, Whole
1 crust Pillsbury Pie Crusts All Ready Rolled
1 cup Soymilk Plain
1/4 cup Cheese

Recipe Directions for Veggie Quiche

  1. Allow Pie crust to come to room temp... Roll out into pie dish and set aside.

  2. Preheat Oven to 350

  3. Chop Pepper and Onion. Put EVOO in frying pan, along with peppers, onions, and frozen spinach. Cook until veggies tender.

  4. Meanwhile, mix eggs, silk, cheese, and salt and pepper to taste.

  5. Plate veggie mixture in bottom of pie dish, then slowly add egg mixture on top. Sprinkle top with more cheese (optional) Cook for 20-40 min until egg is set and crust is golden brown.
