Cheese, bacon, bell pepper, and onion meld together in a yummy quiche-like casserole.

Recipe Ingredients for Veggie Quiche

8 large eggs
2 cups milk
2 ounces cooked bacon, diced
2 small onion, diced
1 large bell pepper, diced
1 cup Bisquick or flour
4 ounces cheddar cheese
5 ounces Muenster cheese

Recipe Directions for Veggie Quiche

In 13x9 pan, spray with a small amount of non-stick cooking spray and cover the bottom of the pan with shredded cheese in a thin layer. In a large mixing bowl, whisk eggs and milk together. Incorporate flour, add veggies and bacon and the rest of the cheese. Pour into baking pan and bake at 350 degrees F for 40 minutes or until a toothpick inserted into center comes out clean.
