A delicious southwestern style "vegetable pie" that's great for any meal.

Recipe Ingredients for Veggie Quiche

1 cup onion, diced
20 ounces broccoli, chopped
1 cup sweet pepper, diced
2 cups cheddar cheese, shredded
3 cups skim milk
6 eggs
1 1/2 cups bisquick
1 tsp salt
1/2 tsp pepper

Recipe Directions for Veggie Quiche

  1. Preheat oven to 400

  2. Combine onions, peppers, broccoli and cheese in greased 9x13 casserole dish.

  3. Blend remaining ingredients until well mixed and pour over veggie/cheese mixture.

  4. Bake for 35-40 minutes.
