Recipe Ingredients for veggie quiche cups

1 egg
4 egg whites
2 large white mushrooms, chopped
1/2 cup white onion, chopped
1/3 cup frozen spinach
1/2 red pepper, roasted
1 tbsp hot sauce
1 tbsp olive oil

Recipe Directions for veggie quiche cups

  1. mix egg and egg whites in bowl

  2. add veggies of choice

  3. pre-grease muffin pans with olive oil (or use paper cups)

  4. spoon mixture into cups

  5. Bake at 350 degrees for approxiamtely 12 minutes or until lightly browned
