Quiche cups can be frozen and reheated. Any combination of veggies and reduced-fat cheese can be used.

Recipe Ingredients for Veggie Quiche Cups

1 package (10 ounces) frozen chopped spinach
3/4 cup egg whites
3/4 cup shredded low-fat cheese
1/4 cup diced red peppers
1/4 cup diced onions
2 cloves garlic

Recipe Directions for Veggie Quiche Cups

  1. Microwave spinach for 2 1/2 minutes on high. Drain excess liquid. Spray 12-cup muffin pan with non-stick spray.

  2. Combine egg substitute, cheese, peppers, onions, spinach, and garlic in a bowl. Mix well. Divide evenly among the cups. Bake at 350 for 20 minutes, until a knife inserted comes out clean.
