One of my favorite meals when I don't want meat.

Recipe Ingredients for Veggie Quesadillas

1/2 pound mushrooms
1 medium zucchini
15 1/4 oz kernel corn
2 medium tomatoes
1 tsp dried basil
6 tortillas
8 oz cheese

Recipe Directions for Veggie Quesadillas

In a large nonstick skillet coated with nonstick cooking spray, saute the mushrooms, zucchini and onions until tender. Add the corn, tomatoes, basil, salt and pepper; cook 2-3 minutes longer or until heated through. Using a slotted spoon, spoon filling on half of each tortilla. Sprinkle vegetable mixture with cheese and fold over tortilla. Lightly spray top of tortillas with nonstick cooking spray. Bake, uncovered, at 400 degrees for 10-12 minutes or until golden brown.
