Recipe Ingredients for Veggie Quesadilla

0.13 cup Spinach
1 tortillas 10'' Large Flour Tortillas
3 oz Mexican Style Four Cheese
0.13 cup, sliced Peppers, Jalapeno
0.13 cup, chopped Broccoli
0.13 cup, strips Peppers, Sweet, Red
0.13 cup, chopped Peppers, Sweet, Green
1 tbsp chopped Onions, Spring Or Scallions
3 tsp Sour Cream
0.06 cup Plain Nonfat

Recipe Directions for Veggie Quesadilla

  1. boil the broccoli, red and green peppers to par cook them

  2. place tortilla on griddle

  3. add cheese

  4. sprinkle chili powder

  5. add the par cooked veggies, sliced jalapenos, spinach, and sliced green onions

  6. when cheese is melted, fold over on itself and cook until tortilla is golden brown

  7. mix equal parts sour cream and yogurt to make the sauce, and serve on the side
