Healthy veggie quesadilla, no salt added.

Recipe Ingredients for Veggie Quesadilla (no salt)

1/2 tbsp canola oil
1/2 cup mushrooms, sliced
1/3 cup carrot, shredded
1/3 cup broccoli, chopped
2 tbsps onions, diced
1 tbsp red bell pepper, diced
1 tsp low sodium soy sauce
1/4 tsp cayenne
1/4 tsp black pepper
2 wheat flour tortillas
1/4 cup reduced fat cheddar cheese, shredded
1/4 cup reduced fat mozarella cheese, shredded

Recipe Directions for Veggie Quesadilla (no salt)

  1. In a frying pan larger than the tortillas, saute vegetables in oil over medium heat (5 - 7 mins).

  2. Season with soy sauce, pepper and salt (if desired)

  3. Pour vegetables into a bowl

  4. Place frying pan back on heat and change heat from medium to low.

  5. Place one tortilla in pan and sprinkle half of the cheese on the tortilla.

  6. Spread vegetables over the cheese, and sprinkle on the rest of the cheese.

  7. Put second tortilla on top and cook for 1 - 2 mins until heated through.

  8. Flip quesadilla and cook 1 - 2 mins.

  9. Slide onto cutting board and cut into 6 equal pieces.
