I used this fill for everyone else in my family's pies, but by the time I was done I was in no mood to make one for myself, so I just ate the fill as a thick stew.

Recipe Ingredients for Veggie Pot Pie fill

2 stalk, large (11"-12" long) Celery
1/2 onion Yellow Onion
1 tbsp, leaves Thyme, Dried
18 tsp Italian Seasoning
10 3/4 oz 98% Fat Free Cream of Celery Soup
10 3/4 oz 98% Fat Free Cream of Mushroom Soup
10 3/4 fl oz Water
1 cup steamed carrots
2 cloves garlic, minced

Recipe Directions for Veggie Pot Pie fill

  1. In a medium stew pot saute the celery, onion, garlic, thyme and Italian seasoning until the onions are tender. Then add the canned soups, carrots (slice before adding) and the water. Stir ingredients together and allow to thicken over low to medium-heat. About 10 minutes at a simmer.

  2. For those who wish to fill a pot pie simply assemble as one would any other pie... just don't forget to log in the pie crust that you use.
