Mixed veggie chicken! Great by itself, in tacos, quesadillas, etc.

Recipe Ingredients for Veggie Pollo

4 medium Tomatoes
1 3/4 cup, diced Celery
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1 medium (2-1/2" dia) Onions
4 breast, bone and skin removed Chicken, Breast, Meat Only
16 grams Chicken Granulated Bouillon
1 tbsp Pepper, Black
4 serving Cayenne Pepper
1 1/2 cup Coriander Leaves

Recipe Directions for Veggie Pollo

  1. Boil Chicken breasts.

  2. While chicken is boiling, cut up tomatoes, celery, red peppers, onion, coriander. Place in a large bowl while waiting for chicken to cook.

  3. When chicken is cooked take out of water and let cool. Shred chicken.

  4. In a deep pot place shredded chicken. Brown on stove on medium/high heat for 5 minutes.

  5. Add all vegetables, spices, coriander to chicken.

  6. Add Chicken Bouillon, salt, pepper, garlic, and cayenne pepper to taste.

  7. Cover pot and let all simmer on medium heat for about 30 minutes. Stirring occasionally.

  8. Top with guacamole, sour cream, cheese.
