Recipe Ingredients for Veggie Pizza

2 cups Squash Butternut
1 tbsp Extra Virgin Olive Oil
1/4 tsp salt
1/4 tsp ground black pepper
1 medium red onion, halved and thinly sliced
1/4 cup whole-wheat flour
2 cups chopped broccoli
2 cups chopped cauliflower
2 cups chopped spinach
1/2 tsp dried thyme
4 oz grated low-fat Parmesan cheese
16 oz whole-wheat pizza dough

Recipe Directions for Veggie Pizza

  1. Heat oven to 400 degrees

  2. Heat pizza stone on bottom rack or use a cookie sheet not heated

  3. Took squash, cauliflower and broccoli with 1 tsp of oil, 1/8 tsp salt and 1/8 tsp pepper

  4. On a baking sheet cook squash until soft and lightly browned, 25 minute, stirring halfway through and then set aside.

  5. In a large skillet over medium-high heat, heat remaining 1 tbsp of oil.

  6. Cook onion with 1/8 tsp salt and 1/8 pepper, stirring until light brown, about 10 minutes.

  7. Add 2 tsp of water, cook, stirring until brown, about another 5 minutes.

  8. Remove from heat.

  9. Turn oven up to 450 degrees

  10. Sprinkle flour on a flat surface

  11. Press dough into a 15-inch circle or 10 x 16 inch rectangle.

  12. Top with squash, cauliflower, broccoli, onion, spinach, cheese and thyme.

  13. Dust stone or inverted sheet with cornmeal and place pizza on it.

  14. Bake until crust is crispy and cheese melts, about 10-12 minutes.

  15. Eat up!!!!
