Veggie Pizza Recipe

The first five ingredients are for if you're making your own crust. I only put them in there so that it would calculate the calories correctly. I used a whole wheat store bought pizza crust. Top with any kind of veggie or cheese you want! Pizza may come out soggy if you don't have a stone (I didn't), but still yummy.

Recipe Ingredients for Veggie Pizza

1/2 teaspoon sugar
1/2 tablespoon dry yeast
1/2 tablespoon olive oil
1 cup whole wheat flour
3/4 cup all purpose flour
1/4 cup tomato sauce
1/4 cup ricotta cheese
1/2 cup mozzarella cheese
1 green bell pepper
1 onion
1 tomato
2 cups spinach
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon basil
1/2 teaspoon oregano
1/2 teaspoon garlic powder

Recipe Directions for Veggie Pizza

  1. Preheat oven to highest setting, but not broiling. Preheat pizza stone if you have one.

  2. Prepare dough using pizza dough recipe (I used store-bought).

  3. Thinly slice peppers and onions. Saute in olive oil until slightly tender (will finish cooking in oven). Saute spinach until slightly wilted. Set aside.

  4. Spread tomato sauce on prepared pizza crust followed by ricotta cheese. Layer onions, peppers, spinach and thinly sliced (uncooked) tomatoes on top of the crust. Sprinkle mozzarella, salt, black pepper, oregano, basil, and garlic powder on top to taste.

  5. Bake until cheese is melted and bubbly, about 20 minutes. Cool slightly and cut into six slices.
