Really great veggie pizza - you won't miss he meat!

Recipe Ingredients for Veggie Pizza

1 package Pizza Crust All Ready
3 oz Fresh Mozzarella
1 1/2 cup Reduced Fat Mozzarella Shredded Cheese
2 medium Squash, Summer, Zucchini, Includes Skin
1 medium Squash, Summer, All Varieties
1 medium raw Onion Red
1 small Peppers, Sweet, Green
2 clove Garlic
5 Cherry Tomatoes
1/4 cup leaves, whole Basil, Fresh
2 tbsp Olive Oil

Recipe Directions for Veggie Pizza

  1. Set oven to 425.

  2. Chop garlic and add to olive oil along with some dired herbs (rosemary, red hot pepper, Italian seasoning, etc.)

  3. Spread dough onto heavy sheet pan, stretch to 9x13. Brush with garlic and herb infused olive oil.

  4. Slice veggies into bite size chunks/slices. Mix with remaining olive oil in bowl.

  5. Put pizza crust on top rack and lay out veggies on another pan on bottom rack. Bake together for 13 mins.

  6. Remove all from oven (leave oven on!).

  7. Spread shredded mozzarella onto crust (no need for pizza sauce, but if you must add it here). Spread veggies.over cheese. Top with tomato slices and fresh mozzarella.

  8. Place back in oven on top rack. Bake for addl. 5-10 min or until cheese is melted and crust is brown

  9. Top with fresh basil.
